Fenugreek (Trigonella Foenum Graecum) is a sturdy annual that is native to the eastern Mediterranean. Fenugreek seeds are a deep golden color with a smooth, hard surface and an angular shape. Fenugreek was employed in paste form by the ancient Egyptians as a topical paste to reduce fevers. The medicinal use of Fenugreek continues today as it is used in the production of some oral contraceptives. Fenugreek is also used in the manufacturing of imitation maple syrup due to the aroma of burnt sugar and sweet taste that comes from Fenugreek. This spice is primarily associated with Indian cuisine and is an essential ingredient in curry powders. The ground Fenugreek has a dull, yellow color and powdery texture.
