Chipotle in Adobo Sauce is a canned product made of chipotle chiles, tomato, vinegar, vegetables, oil and spices. The word "chipotle" translates to "smoked chile". Because these chipotles are smoked jalapeno chiles, it gives them a unique, hot, smoky flavor which is popular in many southwestern dishes.
