I've tried a few gluten free cake mixes and most weren't that great. They were too dense, or they were only good for an hour or so while they were fresh, but this cake mix is wonderful. The cupcakes I made were tasty, light and fluffy, and they stayed good for days. This is just as good as any gluten-ized cake mix. My friends couldn't even tell the difference. I highly recommend it to anyone struggling to find a tasty GF cake.

This was a surprisingly pleasant little cake. Normally when I make gluten-free recipes there's a noticeable gritty texture (I think because of the rice flour content), but this moist lemon cake mix had a nice texture, smooth and very moist -- almost pudding-like. My picky-picky husband even enjoyed it.
Note- to make this mix you will need a stick of butter and eggs. No big deal,just don't be caught without the softened butter when you are ready to make it:).
